Basic Coffee Characteristics

ACIDITY Contrary to what many people think, acidity, as a coffee characteristic, is considered to be a positive attribute because it sharpens and brings specific flavors into focus. It is what gives coffee its pleasant tartness, snap, or liveliness. It is not referring to the ph level of coffee... all coffees are low in ph level.
BODY This is the feel of "weight" and "consistency" in the mouth. Often described as a sense of heaviness, richness, or thickness at the back of the tongue. Body can range from light to full.
FLAVOR This is the total impression of aroma, acidity, and body. The flavor of coffee is often compared to spices, chocolate, nuts, and wine. Flavor ranges from delicate to intense.

AFRICAN & ARABIAN VARIETALS This coffee group has the distinction of being from the original coffee growing region. These coffees have the widest range of flavors due to their unique range of acidities. The resulting coffees represent such tastes as floral, winy, and fruity.
