Coffee 101
Background

Through an intensive "cupping" process, we select the absolute best
estate-grown green beans available. The beans are then custom roasted
in small batches to their "ideal" roast by our dedicated roastmaster, Eric
Patrick. Our coffees are roasted to bring out the most flavor inherent in
each varietal. We roast our coffees to an ebony-brown color, which is the
perfect balance between body and acidity. Roasted too light, the coffee will
have an overpowering "sour" taste; roasted too dark and the coffee loses
the distinctive properties that make each  varietal unique. After every single
roast, each coffee is "cupped" to ensure consistency in our product, and to
guarantee that each and every batch is up to our high standards.batch is
